Tan Oyster Mushroom (Pleurotus Eryngii)

Pleurotus eryngii, commonly known as Tan Oyster mushroom, is the largest species of oyster mushroom. It has a tan-coloured cap and meaty white stem. Native to Central Europe and Western Asia, Pleurotus eryngii is relatively easy to cultivate. It grows well in all seasons across many regions. Crops can be harvested from spring through autumn in moist environments. 

Studies have shown Pleurotus eryngii to have anti-cancer properties and antiviral and antimicrobial effects. It also contains significant levels of vitamin B12 and demonstrates anti-inflammatory characteristics. Pleurotus eryngii and the related Pleurotus ostreatus species are edible mushrooms originally domesticated in Germany during World War I. Consumption offers medicinal benefits and can aid weight loss.

Research indicates Pleurotus eryngii has therapeutic potential against several cancers including renal and hepatic cancers. Additionally, both Pleurotus eryngii and P. ostreatus exhibit anti-inflammatory properties in hyperlipidemic Syrian hamsters. 

Pleurotus eryngii is one of the most widely cultivated oyster mushroom varieties. Several Pleurotus species are edible, with most production centred in Asia but crops are also found worldwide. Its high productivity and nutritional value have contributed to its global popularity. Genetic improvement of Pleurotus initially utilized simple selection before advancing to hybridization and mutation breeding. Current work further enhances productivity, yield, and quality.

The Pleurotus eryngii group demonstrates shared taxonomic and morphological characteristics. Intra- and interspecific hybridization results in genetic polymorphisms, while inbreeding capacity is approximately 25%. 

In nature, P. eryngii grows where oxygen levels are higher, resulting in variations of stem and cap sizes suited to different conditions. Thicker stems are preferred for cooking. Refrigerated storage maintains quality for one to two weeks. Its mild flavour makes Pleurotus eryngii a suitable seafood substitute.
